Ingredients
About 1 kg of apple flesh
1 teaspoon minced fresh ginger or powdered ginger
½ teaspoon of cinnamon (optional)
150 g of sugar
80 g of water
50 g of cream
2 pinches of sea salt
Preparation
Peel, remove the core and cut the apples into small cubes.
Take a large saucepan and place your apple pieces with the sugar, ginger and water.
Cover and cook over high heat for 20 minutes.
Stir regularly. Then remove the lid, lower the heat and caramelize the apples, stirring regularly for about 1 hour.
With a hand blender, coarsely blend the apples, add the cream and the sea salt then mix everything.
Put the pan back on low heat and continue cooking, stirring often, until the desired doneness is obtained (the darker the color becomes, the more caramelized the apples will be).
Mix for several minutes until a very smooth texture is obtained, then leave it to cool.
Equally Distribute into the jars, close them and put them in the cold or sterilize the jars for long storage.
