Preparation
- Braise the leek and onion in the butter.
- Add the pumpkin, cut into small cubes, and continue cooking covered for 10 minutes.
- Pour in the poultry broth. Salt, pepper and let simmer for 20 to 30 minutes.
- Purée the mixture with a food processer, add the cream and sprinkle with chopped chives. Serve.
