Strawberry and summer vegetables gazpacho

Berry season is in full swing! When the weather's hot, there's nothing better than a delicious fresh gazpacho! Enjoy it under the summer sun!

Ingredients

  • 5 red tomatoes, seeded
  • 2 handfuls strawberries
  • 250g (9oz) watermelon
  • 1 small red pepper
  • 1 garlic clove
  • 1 slice of sandwich bread without the crust
  • Juice of half a lime
  • 1 tablespoon balsamic vinegar
  • 1/3 cup of olive oil
  • 1 pinch salt

Preparation

  1. Peel all the vegetables and place in a blender (except the olive oil).
  2. Blend everything together, then continue to blend, adding the olive oil in a thin stream until the desired texture is obtained (ideally neither too liquid nor too thick).
  3. For decoration: add pieces of strawberry, watermelon, cucumber, tomato and a few basil leaves (as well as being pretty, it adds a crunch!).
