Quail with maple syrup and balsamic vinegar

Ingredients

quail
  • 6 quails
  • 1 large onion, chopped

     

marinade
  • 1/2 cup (125 ml) olive oil
  • 4 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp fine balsamic vinegar
  • 1 tsp ground ginger

Preparation

  1. Set aside 4 tbsp. olive oil and the chopped onion.
  2. Place the marinade ingredients in a bowl.
  3. Marinate the quails for 40 minutes, turning them every 10 minutes.
  4. Preheat the oven to 180°C (350°F).
  5. In an ovenproof frying pan, sauté the onion in 4 tablespoons of oil.
  6. Add the quails and brown on all sides.
  7. Stir in the marinade and cook in the oven, uncovered, for 45 minutes, and you're done!
