Silk Road apple crumble

It's apple season and Mélissa Clément from the Family Cooking Workshop has come up with her version of the traditional apple crisp.

Ingredients

  • Cortland apples: 8 large apples
  • Lemon juice: 30ml (2 tsp)

  • Flaked oats: 500 ml (2 cups)
  • Unsalted butter: 125 ml (1/2 cup)
  • Flour: 125 ml (1/2 cup)
  • Brown sugar: 60 ml (1/4 cup)
  • Salt: 1 ml (1/4 teaspoon)
  • Silk Road (Épices de Cru): 2.5 ml to 5 ml (¼ to ½ teaspoon)

Or replace silk road with cinnamon (1/2 teaspoon) or nutmeg (1/4 teaspoon)

Preparation

  1. Preheat the oven to 375°F
  2. Grind the spice mixture in a mortar and pestle. Set aside.
  3. Cut the apples into quarters and drizzle with the lemon juice. Set aside.
  4. In a medium bowl, mix the filling ingredients with your fingertips (oats, butter, flour, brown sugar, salt, spices).
  5. Place the apples in the bottom of an ovenproof dish and top with the filling, without pressing the mixture down too much.
  6. Bake for 20 to 25 minutes. Serve warm with ice cream!

Tips and tricks

  • Freeze croustades in advance when you get back from apple picking!
  • For back-to-school, make lunch portions by placing the croustades in parchment paper muffin tins. For this lunch version, cook for just 15 minutes.
  • To vary the recipe, add blueberries, cranberries and/or pieces of dark chocolate to the apples before adding the crunchy topping.
