The confiturier is dedicated to creating exceptional products with top-quality ingredients. He uses mainly Quebec fruit, preferably organic or wild-grown. The addition of lemon juice brings out the flavors of the fruit, and its acidity helps preserve it.
His jellies and spreads are handcrafted and delicately prepared in small batches, no more than four kilos at a time. This method ensures rapid evaporation of the water contained in the fruit. As fruit flavors are highly volatile, prolonged cooking destroys what we want from a good spread: the impression of tasting summer.
All his products are his creations, and he's always on the lookout for flavor combinations that highlight the dominant fruit.
