How to cook chocolate beggars?

Because chocolate mendiants make excellent gourmet gifts during the holiday season, we're sharing a few tips on how to make this sweet little morsel!

The choice of chocolate: we recommend using chocolate pastilles, no matter which mendiants recipe you choose. Let yourself be tempted by your favorite chocolate variety: dark, white or milk, they're all perfect!

Pro tip: No matter how much chocolate you need to melt, start by melting 2/3 of it in a bain-marie or microwave oven. Then add the last third of your total chocolate quantity to melt it in the already melted and still hot chocolate. The ideal chocolate temperature to reach when everything is mixed is 30°C. On a cookie sheet lined with parchment paper, pour about 1 tablespoon of melted chocolate to create each beggar, taking care to create the shape of a pastille.

Decorating tip: Once the chocolate pastille has formed, decorate the mendiant with the toppings of your choice: dried cranberries, orange zest, shredded coconut, chocolate pearls and nuts (hazelnuts, pistachios, almonds, pecan pieces.) Leave your mendiants to set at room temperature for around 1 hour.
