Strawberries & rhubarb salsa, Desserts et collations

  • Serves four

    • 1 litre (4 cups) strawberries, diced
    • 375 ml (1 ½ cup) fresh rhubarb, diced
    • 125 ml (½ cup) fresh coriander, chopped
    • 1 French shallot, chopped
    • 3 green onions, sliced thinly
    • 1 lime (zest of the whole lime and juice of half a lime)
    • Salt & pepper (Tabasco if you like, to taste)


    1. In a bowl, mix all the ingredients and serve immediately with tortilla chips or grilled pita.

    Note: If the salsa is prepared in advance, mix all ingredients together, except the strawberries and lime juice. Add them when you are ready to eat.
    Variation: Instead of French shallot, you can use a little chopped red onion.
    Tip: This salsa is also great as a garnish or served with grilled fish.
