This refreshing recipe is from Julie Aubé, nutritionist, writer and spoke person for Québec Publics Markets week. She is also the author of the book "Manger Local!" which helps you eat with the seasons, and appreciate the local food your province has to offer.
1 litre (4 cups) strawberries, diced
375 ml (1 ½ cup) fresh rhubarb, diced
125 ml (½ cup) fresh coriander, chopped
1 French shallot, chopped
3 green onions, sliced thinly
1 lime (zest of the whole lime and juice of half a lime)
Salt & pepper (Tabasco if you like, to taste)
In a bowl, mix all the ingredients and serve immediately with tortilla chips or grilled pita.
Note: If the salsa is prepared in advance, mix all ingredients together, except the strawberries and lime juice. Add them when you are ready to eat.
Variation: Instead of French shallot, you can use a little chopped red onion.
Tip: This salsa is also great as a garnish or served with grilled fish.
