Onion, Leek and Apple Soup (Emptying the fridge)

To kick-start the new year and warm you up in these cold temperatures, here's a recipe for onion, leek and apple soup!

Ingredients

  • 2 tbsp (30ml) butter
  • 5 cups (1.5L) sliced mixed onions
  • 2 cups (500ml) chopped leeks
  • 1 cup (250ml) French shallots
  • 1 cup (250ml) cider or apple juice (optional)
  • 1 tbsp. tablespoon (15ml) flour
  • 4 cups (1L) mushroom stock (or other stock)
  • 1 cup (250ml) grated apple
  • 1/2 teaspoon (2.5ml) fresh thyme
  • Salt and pepper to taste

Preparation

  1. In a large saucepan, sweat the onions, shallots and leeks in the butter over a medium heat.
  2. Leave to caramelise for a long time, stirring often without browning too much.
  3. Deglaze with the cider (or juice) and allow the liquid to reduce completely.
  4. Stir in the flour, add the stock, apples, thyme and season.
  5. Simmer over a low heat for 15-20 mins. Adjust the seasoning.
  6. Garnish the soup with croutons, cheese and au gratin if desired.
