Pikliz

Pikliz is a delicious, tasty, and simple condiment that is an integral part of any Haitian cuisine. It is a mixture of freshly chopped cabbage, carrots, onions, and Scotch Bonnet peppers. It is eaten during fritay evenings (a type of fast food), family dinners, and other important occasions.
Pikliz goes well with hot dogs, fried plantains, French fries, griot, and of course, rice. Above all, when cooking pikliz, it is recommended to make a large quantity to share with friends and family!
Why heat it up: if you want to eat it right away. Otherwise, put the pikliz in an airtight glass container and let it sit for 24 hours before eating.
"If you have any chili peppers left over, don't forget to stock up for the winter months! I store them in an ice cube tray, which makes little squares of chopped chili peppers. Just make sure you don't mistake them for ice cubes! "
Note: You can also add red or yellow peppers for flavor and to give it a little more color.
Ingrédients
- 2 cups white vinegar
- 1 teaspoon fine salt
- Freshly squeezed lime juice
- 2 cups (500g) finely shredded green cabbage
- 1 grated carrot
- 2 finely sliced onions
- 2 Scotch Bonnet or habanero peppers
- 5-6 cloves of garlic
Préparation
- In a pot, combine the vinegar, lime juice, and salt. Heat until boiling.
- Cover and set aside.
- In a large bowl, combine the shredded cabbage, shredded carrot, and thinly sliced onions.
- In an electric food processor, pulse the chili peppers and garlic.
- Add the chili peppers and garlic to the cabbage mixture.
- Pour the hot vinegar mixture over the cabbage mixture.
- Transfer to an airtight glass jar and enjoy!
