Pumpkin Soup

Ingredients

  • 250 gr leeks
  • 1 onion cut into cubes
  • 15 mL (1 tbsp.) butter
  • 600 gr pumpkin
  • 1 litre (4 cups) poultry broth
  • 100 mL 15% cream
  • Chives
  • Salt and pepper

Preparation

  1. Braise the leek and onion in the butter.
  2. Add the pumpkin, cut into small cubes, and continue cooking covered for 10 minutes.
  3. Pour in the poultry broth. Salt, pepper and let simmer for 20 to 30 minutes.
  4. Purée the mixture with a food processer, add the cream and sprinkle with chopped chives. Serve.
