Pumpkin Soup

Celebrate pumpkins and fall season in your markets with our special october recipes. Happy Pumpkin Festival!
Ingredients
- 250 gr leeks
- 1 onion cut into cubes
- 15 mL (1 tbsp.) butter
- 600 gr pumpkin
- 1 litre (4 cups) poultry broth
- 100 mL 15% cream
- Chives
- Salt and pepper
Preparation
- Braise the leek and onion in the butter.
- Add the pumpkin, cut into small cubes, and continue cooking covered for 10 minutes.
- Pour in the poultry broth. Salt, pepper and let simmer for 20 to 30 minutes.
- Purée the mixture with a food processer, add the cream and sprinkle with chopped chives. Serve.
