Strawberries & Rhubarb Salsa

This refreshing recipe comes from Julie Aubé, nutritionist, editor and spokesperson for Quebec Public Markets Week. She is also the author of ‘Manger Local!’, a book that helps you eat seasonally and enjoy the local food your province has to offer.

Ingredients

  • 1 litre (4 cups) finely diced strawberries
  • 375 ml (1 ½ cups) finely diced fresh rhubarb
  • 125 ml (½ cup) chopped fresh coriander
  • 1 chopped French shallot
  • 3 chopped green onions
  • 1 lime (zest of whole lime and juice of half)
  • Salt and pepper (Tabasco to taste if desired)

Preparation

Mix all the ingredients together in a bowl and serve immediately with corn chips or toasted pita bread.

If you're making the salsa in advance, mix all the ingredients except the strawberries and lime juice. Just add them when you're ready to enjoy!
