Ingredients
Beetroot salad:
1 cup of Quebec corn kernels
5 to 6 medium sized beets cut in small cubes
1 or 2 apples cut in small cubes
1/4 cup freshly chopped coriander
1/4 cup freshly chopped mint
1/8 cup freshly chopped flat parsley
1/2 cup pomegranate arils (optional)
Corn or olive oil and rice vinegar (to taste)
Preparation
Beetroot salad:
Mix all the ingredients of the recipe except the beets. Add them when serving to keep the beautiful colors of all the ingredients.
To make a complete meal, add feta, quinoa or chickpeas to your salad.
