Beetroot salad, Accompagnements
  • Try this delicious and colorful summer salad recipe from Odette Couture, the winner of our contest "Tell us your favorite summer recipe from the market"!

    Ingredients

    Beetroot salad:

    • 1 cup of Quebec corn kernels
    • 5 to 6 medium sized beets cut in small cubes
    • 1 or 2 apples cut in small cubes
    • 1/4 cup freshly chopped coriander
    • 1/4 cup freshly chopped mint
    • 1/8 cup freshly chopped flat parsley
    • 1/2 cup pomegranate arils (optional)
    • Corn or olive oil and rice vinegar (to taste)

    Preparation

    Beetroot salad:

    1. Mix all the ingredients of the recipe except the beets. Add them when serving to keep the beautiful colors of all the ingredients.
    2. To make a complete meal, add feta, quinoa or chickpeas to your salad.
    3. Enjoy!
