Colourful beetroot salad

Ingredients
- 1 cup Quebec corn kernels
- 5 to 6 medium beetroot, cubed
- 1 or 2 apples, diced
- 1/4 cup coarsely chopped fresh coriander
- 1/4 cup coarsely chopped fresh mint
- 1/8 cup coarsely chopped fresh flat-leaf parsley
- 1/2 cup pomegranate arils (optional)
- Corn or olive oil and rice vinegar (to taste)
Preparation
- Mix all the ingredients except the beetroot. Add them just before serving to preserve the beautiful colours of all the ingredients.
- For a complete meal, add feta, quinoa or chickpeas to taste.
