Colourful beetroot salad

Ingredients

  • 1 cup Quebec corn kernels
  • 5 to 6 medium beetroot, cubed
  • 1 or 2 apples, diced
  • 1/4 cup coarsely chopped fresh coriander
  • 1/4 cup coarsely chopped fresh mint
  • 1/8 cup coarsely chopped fresh flat-leaf parsley
  • 1/2 cup pomegranate arils (optional)
  • Corn or olive oil and rice vinegar (to taste)

Preparation

  1. Mix all the ingredients except the beetroot. Add them just before serving to preserve the beautiful colours of all the ingredients.
  2. For a complete meal, add feta, quinoa or chickpeas to taste.
  3. Enjoy while celebrating our local harvests!
