Holiday Bellini

A cocktail that goes wonderfully with oysters - it couldn't be more festive. Cheers!
Ingredients
Holiday Bellini
- 1 oz fresh clementine juice
- 0.5 oz aperol
- 0.5 oz homemade cranberry syrup
- 3 oz raw sparkling wine
Cranberry syrup
- 2 cups water
- 2 cups sugar
- 2 cups frozen or fresh cranberries
- 2 cinnamon sticks
Preparation
Holiday Bellini
- In a shaker, add ice and all the ingredients except the sparkling wine.
- Shake well and strain into a flute.
- Add the sparkling wine to the cocktail. Garnish.
Cranberry syrup
- In a saucepan, add all the ingredients for the syrup.
- Simmer over a low heat for 15 minutes.
- When the cranberries seem soft, remove the cinnamon sticks, pour the mixture into a blender and when the mixture seems smooth, strain through a fine sieve.
- Keep the mixture in a cool place for up to 10 days.
