Bellini des Fêtes

A cocktail that goes wonderfully with oysters - it couldn't be more festive. Cheers!

Ingredients

Holiday Bellini
  • 1 oz fresh clementine juice
  • 0.5 oz aperol
  • 0.5 oz homemade cranberry syrup
  • 3 oz raw sparkling wine
Cranberry syrup
  • 2 cups water
  • 2 cups sugar
  • 2 cups frozen or fresh cranberries
  • 2 cinnamon sticks

Preparation

Holiday Bellini
  1. In a shaker, add ice and all the ingredients except the sparkling wine.
  2. Shake well and strain into a flute.
  3. Add the sparkling wine to the cocktail. Garnish.
Cranberry syrup
  1. In a saucepan, add all the ingredients for the syrup.
  2. Simmer over a low heat for 15 minutes.
  3. When the cranberries seem soft, remove the cinnamon sticks, pour the mixture into a blender and when the mixture seems smooth, strain through a fine sieve.
  4. Keep the mixture in a cool place for up to 10 days.
