Ingredients

  • 500g pumpkin

Preparation

  1. You need 500g of whole pumpkin to obtain 250ml of puree, so 1 pumpkin weighing at least 360g is needed to make this recipe.
  2. Cut the pumpkin in 2 and scoop out the seeds and filaments.
  3. Bake cut-side down on a baking tray at 190°C (375°F) until the flesh is tender when pierced in several places through the skin with the tip of a knife (about 30 to 40 minutes).
  4. Leave to cool, scrape off the flesh and process in a food processor.
