Carrot Waffles with Whipped Cream à l’Orange

Our recipe for October: delicious carrot waffles to warm you up at the start of autumn!

Ingredients

Carrot waffles
  • 60 g melted butter
  • 5 mL sugar
  • Pinch of vanilla caviar
  • 2 eggs, separated
  • Dash of salt
  • 2 mL blanched lemon zest
  • 125 mL milk
  • 125 g or 250 mL flour
  • 200 mL finely grated carrot

 

Whipped cream à l’orange
  • 100 mL whipping cream
  • 10 mL sugar
  • 10 mL orange liqueur

Preparation

  1. Mix together the butter, sugar and vanilla. Add the egg yolks, salt and lemon zest. Whisk until foamy.
  2. Add the milk and then the flour. Gently fold in the grated carrots and set aside.
  3. Whip the whipping cream with the sugar until it forms firm peaks. Add the orange liqueur.
  4. Whisk the egg whites until stiff and fold them into the reserved waffle batter.
  5. Cook the waffles in an oiled waffle iron,* then serve them topped with the whipped cream and sprinkled with icing sugar.

*If you don’t have a waffle iron, you can cook them like pancakes.
