Raspberry Croque Demoiselle

Ingredients

  • 175 mL (2/3 cup) ricotta
  • 30 mL (2 tbsp.) orange syrup
  • 8 slices of brioche
  • 250 mL (1 cup) of raspberries
  • 2 eggs, beaten
  • 300 mL (1 1/3 cup) light cream (15%)
  • 1 mL (1 pinch) ground cinnamon
  • 60 mL (4 tbsp.) unsalted butter
  • Icing sugar

Preparation

  1. Completely blend the ricotta and orange syrup.
  2. Spread the raspberries over 4 brioche slices.
  3. Cover with the other 4 slices to form 4 sandwiches.
  4. Beat the eggs with the cream and cinnamon.
  5. Dip both sides of the sandwiches in this mixture.
  6. Fry them in hot butter until they are golden.
  7. Sprinkle with icing sugar before serving.
