Raspberry Croque Demoiselle

Ingredients
- 175 mL (2/3 cup) ricotta
- 30 mL (2 tbsp.) orange syrup
- 8 slices of brioche
- 250 mL (1 cup) of raspberries
- 2 eggs, beaten
- 300 mL (1 1/3 cup) light cream (15%)
- 1 mL (1 pinch) ground cinnamon
- 60 mL (4 tbsp.) unsalted butter
- Icing sugar
Preparation
- Completely blend the ricotta and orange syrup.
- Spread the raspberries over 4 brioche slices.
- Cover with the other 4 slices to form 4 sandwiches.
- Beat the eggs with the cream and cinnamon.
- Dip both sides of the sandwiches in this mixture.
- Fry them in hot butter until they are golden.
- Sprinkle with icing sugar before serving.
