Strawberry, Rhubarb and Chocolate Clafoutis

Ingredients
- 250ml (1 cup) Quebec strawberries
- 125ml (1/2 cup) Quebec rhubarb
- 2 eggs
- 250ml (1 cup) 15% or 35% cream
- 60ml (1/4 cup) maple syrup
- 310ml (1/4 cup) unbleached flour
- 15ml (1 tablespoon) baking powder
- 125ml (1/2 cup) maple sugar or brown sugar
- 250ml (1 cup) dark chocolate pieces
- 125ml (1/2 cup) chopped roasted pistachios
Preparation
- Preheat your oven to 350°F while you prepare the recipe.
- Wash and slice the strawberries and rhubarb. Set aside.
- In a large bowl, whisk together the liquid ingredients.
- In another bowl, combine the dry ingredients (flour, baking powder, sugar).
- Gradually add the dry ingredients to the liquid bowl.
- Spoon into a large mould or muffin tins (8) lined with parchment paper.
- Decorate the top with the strawberries, rhubarb and chocolate.
- Bake for around 20 minutes, adding the pistachios at the end. Cool and share!

Variation for this recipe: out of season, this recipe is wonderful with berries that you have kept in the freezer. Delicious with maple chips instead of chocolate and served with Greek yoghurt.
