Preparation
- Prepare honey syrup: in a small saucepan, combine 125 ml (1/2 cup) honey with 125 ml (1/2 cup) water. Bring to a boil, turn off heat and cool. (See note).
- Prepare cocktails: line up a number of glasses according to the number of guests. Pour vermouth, gin, pure cranberry juice and 1/2 oz (15 ml) chilled honey syrup into each glass.
- Top with cider and a few cranberries for garnish.
Alcohol-free version :Omit the vermouth and gin, then replace the cider with a dry, sparkling apple must.
Note : Honey syrup can be made in advance and will keep for several days. If you have leftover syrup, depending on how many cocktails (or rounds of cocktails!) you've made, it can also be used to flavor sparkling water, lightly sweeten herbal teas or even make honey-glazed carrots. One thing's for sure: it won't go to waste! To add a little forest note, you can infuse it with a small piece of natural fir or dried spruce shoots.
